Condiments
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
Alternate recipe:
* 1 bunch fresh flat-leaf parsley, finely chopped
* 2 bay leaves
* 6 cloves garlic, minced
* 1 1/2 teaspoons smoked paprika
* 1 tablespoon fresh oregano leaves, finely chopped
* 1/2 cup red wine vinegar
* 1 1/2 cups extra-virgin olive oil
* 1 teaspoon salt
* 1/2 teaspoon freshly ground black pepper
Blend all ingredients except for the vinegar (adding it last is supposed to avoid oxidation and keep the bright green color of the sauce). When blended, add half the vinegar and taste. Then adjust as necessary, a small amount at a time.
Some recipes suggest that hand grinding yields the best taste.
